This recipe is from Eating for Life. It wasn't bad but there are a couple things I will do differently next time.
Chicken Kabobs
4 portions rice (about 1 cup uncooked)
4 portions chicken breast (about 1 lb), cut in 1 ½ inch squares
2 green bell peppers, cut into 1 ½ inch squares (use pineapple instead)
2 red bell peppers, cut into 1 ½ inch squares
12 fresh mushrooms, whole
1 onion, cut into wedges
1 tbsp olive oil
2 tsp McCormick Montreal Chicken seasoning ( put teriyaki sauce on also)
Prepare the rice according to its package directions. Preheat grill.
On 4 skewers, alternately thread a piece of chicken, then peppers, mushroom and onion. Repeat until all ingredients are used.
Lightly brush the olive oil over kabobs and sprinkle with Montreal chicken seasoning.
Grill kabobs for 5 minutes; turn and grill until the chicken is no longer pink in the center, about 5 more minutes.
Place a portion of rice and one kabob on each plate. Serve and enjoy!
